Our Story
Finca Los Conejos began in 2014 in the jurisdiction of El Carrizal, a few kilometers before arriving to Santa Rosa de Lima, as a family investment, it takes the name of Los Conejos, because of 4 pets that were given to the family and that were sent to the farm so that they could rise in an appropriate environment for their growth. When exploring the land in more detail, a coffee plantation was discovered with amazement, so it was decided to seek immediate advice to rescue the crop, providing the coffee trees with the appropriate fertilizers based on satellite soil studies, to achieve the best fruits that coffee trees could produce.fter hiring a coffee expert from the region, the plants were well nourished, with adequate fertilizers and foliar. We also invested in soil and water studies, to get the best fruits that the coffee tree can produce.
Initially, 3.5 hectares of coffee had been planted, and the ripe cherries began to be processed as Natural Coffee, of the Catuaí varieties by 90% and Bourbon by 10%, with this blend we can achieve a great cup profile. In the seven years that we have participated in the Anacafé Regional Competition, Finca Los Conejos has always managed to position itself within the Top 10 of the Best Coffees in Region IV, Region of Santa Rosa, Jalapa and Jutiapa.
This has motivated us to continue investing in Finca Los Conejos and by 2020 and 2022 despite the circumstances derived from the COVID-19 pandemic, 68,160 new coffee plants, that can give excellent cup quality such as Geisha, Yellow Bourbon, Red Pacamara and Red Mondo Novo were planted.
We have begun to experiment with hot anaerobic fermentations and the Carbonic Maceration process in order to achieve unique flavors and more complex profiles that may be a characteristic of Finca Los Conejos specialty coffees.
The name of Finca Los Conejos Specialty Coffees is very original, which allows it to be easily remembered by our friends, suppliers and customers with whom we hope to have solid business relationships and long-term friendships.
